Fireside Snacks: Grilled Pineapple Salsa
Looking for the perfect dish to add a little zest to your fireside happy hour or patio dinner? We’ve got you covered with this grilled pineapple salsa.
To make it, you’ll need:
1 fresh pineapple, peeled, cored, and sliced into rounds
Extra-virgin olive oil, for brushing
1 jalapeño, minced
2 tomatoes, diced
2 ripe mangos, diced
1/2 a red onion, chopped
1 lime, juiced
Kosher salt, to taste
2 tbsp. freshly chopped cilantro
How to:
Preheat grill or grill pan over medium-high heat. Brush pineapple rounds with olive oil and grill until nicely browned on both sides. Set aside to cool, then chop into small bite-sized chunks. Mix pineapple, tomatoes, mangos, jalapeños, onions and lime juice together in a bowl. Season with salt to taste and garnish with cilantro. Serve with chips and enjoy fireside with a refreshing drink!
