This recipe for sweet and tangy key lime bites is a crowd-pleasing fireside snack.
You'll need:
3/4 cup graham cracker crumbs, crushed (about 12 squares)
1 1/2 tbsp sugar 1/4 stick (2 tbsp) butter
2 egg whites beaten
One 14 oz can sweetened condensed milk
1/3 cup key lime juice
3 tbsp nonfat Greek yogurt
Whipped cream
How to:
Put the crushed graham cracker crumbs into a bowl. Add sugar and butter and mix.
Press 1 tablespoon graham cracker mixture into the bottom of a cupcake liner. Place liners into a cupcake pan and bake at 350 degrees for 8 minutes so that it can harden.
In a separate bowl, mix together egg whites, condensed milk, lime juice, and Greek yogurt.
Mix well.
Fill the cupcake liners about 3/4 of the way with the mixture. Bake for 12-15 minutes or until set. Let cool completely.
Top with whipped cream and garnish with lime if desired. Store in the refrigerator.
